Baked Oats

I cook more now that ever, and not only to save money, but also to lose weight and this is one of the easiest breakfast ‘recipes’ in my book (can I even call it a recipe?)

I discovered Baked Oats while at a Slimming World class and its so adaptable to whatever fruit you have hanging around in the bottom of the fruit bowl – see above for tinned pineapple and below for frozen cherries and grapes :

To make the Baked Oat you will need;

  • 35g Porridge Oats
  • 1 egg
  • 3tbs artificial sweetener
  • 90g any flavoured yoghurt you fancy
  • 1/2 tsp vanilla extract
  • 100g any fruit you fancy (frozen fruit seems to work really well in this)

Instructions:

Preheat your oven to 200°C/Fan 180°C/Gas 6.

Mix all the ingredients into a bowl – stir really well so none of the oats are dry and clumpy.

Scrape into a oven safe dish and bake for around 30-35 minutes until top is browned and crispy looking.

This is such a nice breakfast and to top it off I add some more yoghurt on top and chopped fruit once it has cooled a little (burned my mouth more than once I’m ashamed to say!)
